The Institute for Private Business Seminar Series Presents “The Business of Barbecue”

photo-3The SLU John Cook School of Business Institute for Private Business welcomed Case Dorman, owner of Fiorella’s Jack Stack Barbecue in Kansas City, and John Vergos, owner of Charles Vergos’ Rendezvous in Memphis, to discuss the “Business of Barbecue.”

As part of the panel discussion moderated by Dr. Jerry Katz, the Coleman Chair of Entrepreneurship at Saint Louis University and chair of the Billiken Angels Network, Vergos and Dorman shared their unique perspectives on culture, staying true to their legacy and expansion. 

In St. Louis, especially, the barbecue scene continues to heat up with many new restaurants opening throughout the area. Following the panel session with Vergos and Dorman at the Moto Museum, event guests headed to Pappy’s Smokehouse where they continued the conversation while enjoying St. Louis style barbecue.
